At the heart of Miette are naturally fermented brioche beignets: rich, soft French-style fried pastries inspired by traditional levain methods and filled seasonally with refined creams, curds, preserves, and rotating culinary flavours.

Produced in small batches and naturally fermented over time, our dough develops deeper flavour, delicate texture, and improved digestibility, resulting in food that feels both nourishing and indulgent.
